Center for Food Safety Director to Lecture at Academy in China

FAYETTEVILLE, Ark. – Steven C. Ricke, director of the University of Arkansas System Division of Agriculture Center for Food Safety, will deliver lectures this week in Beijing at the invitation of China's Academy of State Administration of Grain, a national research institute. During the visit, Ricke will also meet with the academy's officials to discuss the research programs at their respective institutions.
Ricke will lecture at the academy on Thursday, Nov. 14, on current research perspectives on foodborne Salmonella in food production systems. He will also discuss research on rice bran. On Friday, Nov. 15, he will deliver a lecture on development of rapid methods for assessing the bioavailability of amino acids in cereal grains. He will also speak on the gastrointestinal response to prebiotics and grain byproducts.
