U of A Students Win Blackberry, Raspberry Recipe Contest

Chocolate éclairs with blackberry mascarpone filling, by University of Arkansas student Joshua Andrews of Atlanta, won first place in a recipe contest held during the annual conference of the North American Raspberry and Blackberry Association in February.

The North American Raspberry & Blackberry Association awarded prizes to two students in the University of Arkansas Food Sciences Department for their winning recipes in a Raspberry and Blackberry Recipe Contest. The contest was conducted as part of the association's annual conference, held in Fayetteville in late February.

The first place award went to Joshua Andrews for his recipe "Chocolate Éclairs with Blackberry Mascarpone Filling." Originally from Atlanta, Andrews is a sophomore food science major with a concentration in food and culinary science. Second place award went to Carlyn Oswald for her recipe "Raspberry Dessert Enchiladas." A senior in the food and culinary science concentration, Oswald is from Austin, Texas.

NARBA Executive Director Debby Wechsler said, "Raspberries and blackberries are such flavorful and nutritious fruits. We are pleased to see students using their creativity to create these delicious desserts. I hope that raspberries and blackberries will also figure prominently in their future careers."

The winning recipes may be found on NARBA's website – Chocolate Éclairs with Blackberry Mascarpone filling and Raspberry Dessert Enchiladas. The website includes more than 100 other recipes, from beverages and salsas to breads and desserts, which can be searched both by category and degree of difficulty.

NARBA is a membership organization of growers, researchers, and others associated with the caneberry industry. The association has members in 35 states, seven Canadian provinces, and five countries.
